Using Blentech's machines for cooking Chowder

Cooking products with a light, non viscous sauce with heavy particulates that sink or float carries another set of problems. It is important to keep the particulates in suspension. Some vegetable ingredients tend to float whereas other ingredients such as pasta tend to sink rapidly. A properly designed horizontal style agitator is the best choice for this type of product since the action of the agitators is more effective in agitating the batch vertically. The agitator forces provided by the agitator rotation push the floating pieces down and lift the sinking pieces up keeping the batch evenly in suspension without requiring excessive agitator RPM that might cause particulate damage.
