The Maritek Marination System (multiple patents pending) is a revolutionary marinating concept that is continuous, non-vacuum, increases marinade pickup and tenderizes the meat product. This innovative system can pre-condition both bone-in or boneless meat products by pressing individual pieces between two flexible pads “relaxing” the muscle fibers to enhance marinade absorption. The pads are designed to envelop bone-in meat pieces for effective pre-conditioning without breaking the bones.
Continuous Marinating
The pre-conditioned meat is conveyed into a continuous, non-vacuum rotary massager along with the desired amount of marinade to achieve full absorption. Marinade pickup of more than 20% can be attained with bone-in chicken wings. Beef, pork and fish have also been marinated with this system with promising results. Higher levels of marinade pickup - up to 40% absorption on some products - can be achieved by increasing the percentage of marinade up to a 1:1 ratio to the meat while increasing the duration of the massage cycle.
Analysis of the Results
Meat product marinated by the Maritek process exhibits noticeably improved marinade penetration and distribution throughout the muscle and enhanced meat tenderness as compared with injected or vacuum marinated products. Maritek pre-conditioned product absorbs and retains more marinade - with less purge - than conventional marination techniques.
