Using Blentech's machines for cooking Custards
There is a whole new set of processing considerations when cooking products with milk or cream or products high in sugar. Milk based products tend to boil very easily and foam when the product gets too hot causing the batch of product to boil over. If the heat exchange surface is too hot the milk in the product will scorch and take on an off flavor. Fruit products high in sugar content will also foam readily and will burn-on easily as well.
